Here's the recipe for the potatoes from the RS birthday dinner. Sorry I've never remembered to post it here. I'm also sorry I don't know how to put it into the recipes section of this blog. I guess I need some lessons!

Cheesy Potatoes

Potatoes (5 or 6 medium)
Cream of Chicken soup (1 can)
Cheese (I used sharp cheddar, about 8 oz, shredded)
Sour Cream (small container, about 8 oz)
1/2 teaspoon Salt, 1/4 teaspoon Pepper, 2 Tablespoons Dried Minced Onion (You can also use about 1/2 of a chopped onion in this recipe, I just always use dried onions because that's what I have on hand and I don't like to chop onions.)

Peel potatoes, and cut into slices. Boil potato slices for about 5 minutes. Don't boil them too long or they'll get mushy when mixed with the other ingredients. While the potatoes are cooking, mix together the other ingredients. Drain the potatoes and put them in a 9x9 inch baking pan. Pour the soup/cheese/sour cream mixture over the potaoes and mix together. Bake at 350 degrees for 20 minutes or until heated through and bubbly. (I've also heated it all in the microwave if I'm in a big hurry, but the batch I did for the RS dinner I heated in the oven.) These potatoes taste even better the second day; I guess the flavors have a chance to blend by then. I didn't discover this until my kids left home and we actually had leftovers. ;)
